Snack: Cut up banana, figs and pomegranate seeds (!)
Snack #2: Vegetable cracker with roasted salted almonds, walnuts and pistachios
Lunch: Mini sandwiches made with butter bean spread and amul cheese slice. Tomato ketchup to dip and enjoy.
Note: Y tasted pomegranate for the first time yesterday. I was eager for him to like this super nutritious fruit and he did...yeppiee!. So guess what, I had to add few pomegranate seeds to his snack cup today. After reading up on health benefits of these sweet succulent ruby red seeds, I am going to make sure that all three of us periodically eat this wonder fruit.

ReplyDeleteSandwich recipe sounds good...Shaan has become such a picky eater now that I don't know what to do with him. he'll eat everything we'll eat but nothing that he is supposed to eat.

ReplyDelete@ Chithra..I am glad. For kids, less is more.When making a sandwich for me, I add the bean spread, sliced tomatoes, grilled onions...anything on hand and the sandwich tastes divine!
ReplyDelete@ Aru...don't sweat it. Shaan is still a baby. He'll do fine eating the right things by watching u & N. Seems absurd but if we want Y to eat broccoli, M & I have to eat it and 'pretend' its the best thing we have ever tasted.

looks yumm....today i gave Vihaan veggie sandwiches with amul cheese...me and R had it for breakfast too...it was so yumm and healthy and i added very tiny mini paneer cubes too..thanx for the ideas

ReplyDeleteQuestion..y do u prefer Amul cheese over regular cheese we get here? Is it more nutritious or just to mix it up a little??
@ Keep the faith...Honestly, I had Amul cheese slices in the fridge. Taste wise, Yash likes them both. Nutrition wise....you raise a good question. I found nutrional charts for Amul ( non verified data source) & Kraft cheese slices. I am adding that to the post.

did you make the butter beans spread with fresh beans or canned? I have not seen fresh ones around up here.. BTW the lunch box looks really yummy!
ReplyDelete@ Ashwini...Yes, it is hard to find fresh butter beans. I used dried butter beans. Soaked and pressure cooked.

CUTUP fruits (even if refrigerated) do oxidize or nutritional values go down and are not a healty option..
@ Amita.....hmmm My grandmother used to say that cut up fruits should be eaten within a day. Besides, fruits like banana, apples, pears look yucky ( without lemon juice )after they are cut for long time.Y's fruit cup is packed early in the morning and eaten by mid morning for snack. Having said that, I think fresh fruits, even if they are refrigerated for couple hours will have much better nutrition compared to store bought snack cups which are ususally served in most daycares.
